Welcome to the
latest edition of Aromatherapy News!
At times, understanding
the role that Aromatherapy can play in our lives comes easier than do
ways to introduce that value into our own homes on a meaningful, and
day to day basis.
To the rescue comes
this month's feature article, by Jill Black, providing a wealth of ideas
on bringing the pleasure of essential oils into your home, for the betterment
of your life, and that of your family's. We

When guests first
enter your home the first thing that greets them is the aroma. Essential
oils are often used to create a homely atmosphere within the home.
Add 6-8 drops of
your favorite scent to water in a diffuser or place the drops directly
into a bowl of boiling water. Sweet orange, lemon and your favorite
spice oil are especially good when diffused during the winter months
for a refreshing, warming aroma and atmosphere.

Peppermint is considered
a top note oil, and has been used for hundreds of years as a digestive
assist, via teas and other ingestion methods.
Extraction of the
oil is centered on the leaves and flowers, and is generally handled
through steam distillation.
Other uses include
dilution and use as an insect repellent, massage of the diluted oil
into the temples to help relieve headaches, steam inhalation for sinus
and bronchial concerns, and massage into the abdomen for the relief
of colic and indigestion.
Many 'foot health'
lotions and oils also incorporate peppermint, for its refreshing qualities.
Peppermint oil
combines well with Eucalyptus, and Rosemary.

Eggplant
Rolls with Feta and Mint
The pairing
of refreshing mint with sassy feta cheese is sure to enliven
the taste buds!

| 1
large eggplant |
| 12-oz
jar roasted bell peppers, drained |
| 3
tablespoons mayonnaise |
| 1/4
teaspoon cinnamon |
| 6
oz feta cheese |
| 1/2
teaspoon chopped lemon zest |
| 1
tablespoon chopped mint |
| 1
tablespoon olive oil |
| salt
& pepper |
|
|
Slice the eggplant
into 1/4 inch rounds. Pick out the twelve largest rounds and reserve
the rest for another use. Place the rounds in a colander and sprinkle
generously with salt. Let the eggplant 'sweat' for 30 minutes (this
process removes the bitter taste from the eggplant, and also reduces
its tendency to soak up oil). Rinse the eggplant well and pat dry.
Heat a ridged grill pan over medium-high heat. Brush lightly with
olive oil. Grill the eggplant until nicely marked on both sides.
Remove to a working surface, such as a large cutting board.
Preheat oven
to 375 degrees. In a mixing bowl, blend together the feta, lemon
zest, mint, and salt and pepper to taste. Form about 1 tablespoon
of the mixture into a log with your hands, place onto the lower
third of an eggplant round and roll to enclose the cheese. Place
on a baking sheet. Continue with the remaining rounds. Bake for
about 5 minutes, or until the cheese has just started to melt. In
a food processor or blender, puree the roasted red peppers with
the mayonnaise and cinnamon until smooth. Season with salt and pepper.
Serve the rolls with a dollop of the bell pepper sauce.

Recipe of the Month |

"Having
suffered from IBS for some time, I began to explore aromatherapy as
a way of easing the discomfort.
One
recommendation that I tried with some success is a diluted mix of my
favorite carrier, and Chamomile oil. I then warm the mixture slightly,
and massage into my abdomen.
I
